We've all seen the viral food trend on social media where influencers created "ice cream" using cottage cheese. If you want ice cream but feel guilty, cottage cheese ice cream is a great substitute. This version adds even more flavor by adding in our decadent pistachio butter or pistachio cream into the recipe.
HIGH-PROTEIN COTTAGE CHEESE PISTACHIO "ICE CREAM" RECIPE
INGREDIENTS
- 16 oz whole milk cottage cheese
- Any of the following works for this recipe
- 3 tbsp Peppertux Unsweetened Pistachio Butter + 1/4 cup maple syrup OR
- 1/4 cup Peppertux Original Pistachio Butter
- 1/4 cup Peppertux Vegan Pistachio Cream
- Optional: chopped pistachios and/or 1 tbsp of Peppertux Pistachio Butter or Pistachio Cream to garnish
INSTRUCTIONS
- Using a high-powered blender or food processor, add cottage cheese, Pistachio Butter (+ maple syrup if using unsweetened pistachio butter) or Pistachio Cream and blend until smooth.
- Place in a container and freeze for 4 hours.
- Drizzle Peppertux Pistachio Butter or Pistachio Cream on top and enjoy!
